This is the most delicious flatbread I’ve ever tasted! The texture and flavor are excellent. I also used the oven to make flatbread pizza!

The aroma is intoxicating and fills the house. There were plenty of residual juices in the pan to create a gravy but I opted not to making gravy. I just drizzled the pan juices to the chicken and vegetables. The vegetables in this dish are outrageous….definitely add more vegetables…they were also moist. The leftovers were simply divine…the chicken was still moist.
I love omelette’s and today I’m going to make tomato green onions with a little cheese omelet. Good healthy breakfast after working out and now I am ready to face the world. This should hold me until dinner time.

The key in cooking scrambled eggs is making sure that it is cooked in low heat and not over cook it. This is very good with Trader Joe’s Pain Pascal. I like making an open face sandwich along with my coffee in the morning. This is also good for lunch.
This can be made with frozen or fresh corn. Cut fresh corn on the cob off the cob and mix it with jalapeno, lime juice, cilantro, and red onions. Combine all ingredients in a medium bowl and mix. Cover and chill 1-2 hours to blend flavors. Serve with grilled meats, fish, or as a dip with tortilla chips.
What a great combination. Watermelon, arugula, feta, mint, lemon juice, orange juice, and shallots compliment this wonderful salad. Really a good summer salad. The mint and watermelon did the trick. The feta was a good contrast to the fruit and the hint of mint in every bite was heavenly. Again Ina thank you!!!
I always get nervous when Mom announces that she will be making turkey meatballs and tomato sauce. A few minutes later, Mom asked me to do something to the sauce because she said that it was too watery. When I looked at the sauce and tasted it, it had no taste at all. I don’t think she put any salt or seasoning. I immediately started to think of how I can salvage this and not want to hurt her feeling.
I served it with whole wheat couscous and it was absolutely delicious. Too bad we only had four chops, next time I will make more. Mom and I enjoyed every single bite and wanted more. You can really taste all the spices. Very nice simple dish and will definitely keep this recipe.
I have a small piece of pork satay left from the other night and for lunch I will make tacos. First cut pork in strips and mix the marinade sauce and reheat in the oven while you make Pico de Gallo salsa. Instead of shredded lettuce I am using sliced radish and avocado…..we were both silent savoring every single bite.
