It’s easy and you feel like you have just eaten a meal prepared by a chef which of course is you. Most of the time we take simple ingredients like oranges, shallots, capers, chicken, and parsley for granted. You can actually make a delicious meal….
I am a huge fan of chicken liver and this is the most delicious chopped liver that I’ve ever had. The next time I prepare this, I will use my food processor, this time around I wanted to feel the texture of the ingredients and add sage next time. This would be great for tapas too. Great flavors!!!
I think one of my favorite comfort food when the weather gets cold, raining is having a nice bowl of linguine with clams, crusty bread, and a bottle of wine. I recently visited friends of mine and for dinner John made linguine with clams.

I watched Ina prepare this salad and loved all the ingredients. I don’t understand why I never made my own artichoke salad now it’s no longer an excuse. Well, the family loved it.

* 1/2 cup plain bread crumbs

The weather is changing from summer to fall and I have been craving good comfort food, consumption of a nice red wine, crusty warm bread, and salad. I recently watched an episode of Food Network “Food Feuds with Michael Symon – meatballs in Philadelphia.” I love meatballs especially when it is prepared correctly. Speaking for myself, I have been in search for a good turkey meatball recipe and was lucky enough to taste it three years ago at my niece’s home.
Woke up this morning craving for omelet. I wanted to create something that reminds of Italy. I’m taking inventory of what I have in the fridge and it looks like I have tomatoes, green onions, fresh basil, mozzarella cheese, eggs, and heavy cream. Let’s make Margherita omelet. I think it will be good.
I will prepare Carbonara but it’s a little too rich and wanted to make something similar. I will make an easy version of Carbonara by browning Applewood bacon, a dash of pepper flakes, Barilla Plus Spaghetti, chopped Italian parsley, freshly grated Pecorino Romano cheese and egg yolk.
Add ¼ of parsley, ¼ of cilantro, and ¼ of mint; blend until incorporated. Add remaining herbs in 3 more additions, pureeing until almost smooth after each addition. Can be made 1 day ahead, cover and chill.
Instead of using mayonnaise I am substituting Greek yogurt which gives it a tangy flavor, Dijon mustard, ground fennel seeds and fresh chopped Italian parsley. I squeezed tuna to extract all the water.
When I shop at 99 Ranch I never know what I’m going to purchase. They have so many types of fresh fish to choose from! I found catfish steaks and can’t wait to prepare it. I love fresh catfish and prepare immediately with my favorite recipe fried catfish.
