Catfish Tuscany

I love catfish and found this recipe on line and it looks simply delicious and most of all it only takes 20 minutes to prepare.  This is the type of meal I like to prepare.  While the fish is cooking I can cook vegetables and prepare salad.

Ingredients:

  • 4 (4 oz) catfish fillets
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons butter, softened
  • 1 1/2 tablespoons mayonnaise
  • 4 Roma tomatoes or sun-dried tomatoes, sliced thin or coarsely chopped
  • Dash of Tabasco

Directions:

Preheat broiler to 500 degrees.  Coat a broiling pan with nonstick cooking spray.  Brush both sides of fillets with lemon juice, and then sprinkle with salt and pepper.  Place fillets flat side up on prepared pan.

In a small bowl, mix Parmesan cheese, butter, mayonnaise, and Tabasco sauce.

Broil fish about 4 inches from heat for 6 minutes.  Remove from oven, and turn fillets over.  Spread the cheese mixture evenly over each fillet.  Top with tomato slices or chopped sun-dried tomatoes.  Broil an additional 4 to 6 minutes, or until fish flakes easily with a fork.

If you don’t have nonstick cooking spray, you can also use parchment paper  and butter both sides and place it on top of cookie sheet.  I broiled one side of the fish and when it was time to turn fillets over, I turn on the oven at 450 degrees and spread the cheese mixture evenly over each fillet.  I cooked the fish until the cheese browned a bit.

The fish came out flaky and the cheese topping was so creamy.  I think you can also use snapper, tilapia, or bass.  Sun-dried tomatoes worked well with the dish.  Next time I make this dish, I will make sure I have Roma tomatoes.
