Egg Yolk Bacon Pasta
I noticed I have a couple slices of Applewood bacon that needs to be cooked immediately otherwise it will end up in the garbage can if I don’t use it this week. What am I in the mood for tonight for dinner? Lately I have been having salad and fish. Pasta is one of my favorite foods and perhaps I will prepare Carbonara but it’s a little too rich and wanted to make something similar. I will make an easy version of Carbonara by browning Applewood bacon, a dash of pepper flakes, Barilla Plus Spaghetti, chopped Italian parsley, freshly grated Pecorino Romano cheese and egg yolk. Mix all the ingredients except for the egg yolk. Once you finish mixing all the ingredients on a non-stick pan, place the egg yolk on top. Leave the mixture in the pan for a couple of minutes to ensure that the egg yolk cooks from the heat of the pan. The egg yolk will have the same consistency as a soft-boiled egg. When you serve it on a hot plate and break the egg yolk with a fork in the pasta the creaminess of the egg yolk act as the sauce. It’s very delicious with a nice glass of Chardonnay and of course salad.
