Parmesan Crusted Tilapia

Three more weeks of observing Lent…no meat tonight!  Why is it that when you can’t it meat that’s when you want to have it?  And when you can have it, you end up having seafood? Mom loves tilapia especially the tortilla crusted tilapia from Safeway.  Unfortunately Safeway has not had this for sometime now.  It’s fresh, not frozen.  The only fish that comes close is Waterfront Bistro in the frozen food section.  This will be easy; all we have to do is cook the fish in the oven.  I’m making Lemon Mashed potatoes…they were so good and salad.  Definitely no wine tonight as much as I would love to have a glass with dinner.
