Easy Lemon Pie

I recently visited friends where we made individual pizza which was a lot of fun.  Dinner would not be complete if dessert is not served as always my friends did not disappoint.  John made lemon pie which was so delicious and creamy.  Anyone can prepare this in 30 minutes if you use pre-made graham crust or you can make your own.   You will be the hit of the party that everyone will be asking for the recipe!

Graham Cracker Crust:
2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons butter, melted
Preheat the oven to 375 degrees F. 2 packages graham crackers and place in food processor. This will yield 2 cups.  In a medium bowl, stir together the graham cracker crumbs, sugar, and the melted butter and resembles a wet sand mixture.  Pour into a pie plate and press the mixture firmly along the bottom and sides.  Bake for 7 to 8 minutes.  Remove from the oven and let cool completely.

Filling
1/2 cup lemon juice
I (14oz) can sweetened condensed milk
3 egg yolks (beaten)
1 teaspoon vanilla extract
Zest of one lemon

Heat oven to 350. Stir lemon juice into condensed milk. Gradually add and stir in beaten eggs. Pour into pie crust. Place the pie plate on top of a cookie and cook for 20-25 minutes (until filling is somewhat set). Let cool.  After cooling, place in refrigerator and chill. Bring to room temperature before serving.

Once the pie is cool you can top it with fresh whipped cream.  I hope mom will like it. The lemon zest and vanilla extract really enhanced the flavor…so good!!!!!!
