Chicken Breast Spanaki

I have two chicken breast to cook tonight and don’t know how I’m going to prepare it.  I didn’t feel like making the old standby and decided to try one of the many saved recipes I have in FoodNetwork.  Tonight I’m trying Bobby Flays’ Chicken Breast Spanaki.

Ingredients

  • 1/2 cup olive oil
  • 2 stalks fresh green onions, chopped
  • 1 medium onion, chopped
  • 1 pound frozen spinach, washed, squeezed to remove excess water
  • 1/2 cup fresh dill, chopped
  • 2 whole eggs
  • 1 pound feta cheese, crumbled
  • 1 tablespoon ground pepper
  • 8 large chicken breasts
  • Olive oil
  • Lemon
  • Oregano

Pour olive oil in pot over medium heat and add both types of onion. Saute for 1 minute, and then add spinach. Saute for approximately 10 minutes.

Preheat the broiler.

Pour spinach mixture in a bowl and cool. Add dill, eggs, feta and pepper to spinach mixture and mix very well.

Butterfly chicken breasts and fill with spinach/feta mixture. Close the breast and broil for 10 minutes on each side. After 15 minutes, douse chicken breasts with olive oil, lemon and oregano, and serve.

I’m using breast with the bone-in with skin for more flavor and make a small cut in the middle to insert the filling.  Instead of using frozen spinach I used fresh spinach and let it wilt on top of the onions.  This dish is quick, easy, and delicious!  I just love this dish and making it again for mom. Since I don’t have fresh dill I will add 2 tablespoons dry  dill in the filling.  Before stuffing the chicken I lightly seasoned it with salt and then stuffed it with spinach mixture.  I would recommend using toothpicks to hold the chicken together.  The broiler really cooked the chicken fast.  The olive oil, lemon and oregano mixture; I added the zest of one lemon to taste the lemon more and seasoned it with salt. I also used fresh oregano.

The chicken was juicy and the combination of spinach and feta really works especially dosing the chicken with lemon, olive oil and oregano mixture really makes this dish.

I could not believe how wonderful and so easy to follow.  Very quick and impressive dish to prepare for family and friends.  You will love how juicy the chicken stays and the combination of the spinach and feta with a hint of  lemon is very delicious.  Overall a terrific chicken dish that will look, smell and taste better than you could imagine.

I made this recipe once again when Dawn visited us in September.  My family really enjoyed this meal. I will definitely make this again.
