Sriracha Slaw

There will be times when you don’t have all the ingredients when following recipes; I find this is my way to be creative and follow my instincts.  Thanks to Emeril Lagasse I finally found a delicious coleslaw…

Ingredients

  • 2 tablespoons Sriracha Sauce (you can add more if you want it spicy)
  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon lime zest
  • 1 tablespoons lime juice
  • 1/4 pound shredded white cabbage (about 1 cup)
  • 1/4 pound shredded red cabbage ( about 1 cup)
  • 1/2 cup shredded carrots
  • 1/4 cup finely chopped red onions
  • 1/4 cup chopped green onions

Mix mayonnaise, Sriracha sauce, honey, lime zest, and lime juice in a large mixing bowl.

Start easy on the Sriracha and then continue to add Sriracha until you reach your desired heat.

Add the shredded cabbage, carrots, red onions, green onions and stir thoroughly.  Season to taste and add a pinch of salt if needed.

The first time I made this slaw I followed the recipe and thought it was pretty good.  I noticed there was just too much dressing and not enough shredded cabbage and I did not use red cabbage; the slaw looked a little dull and needed color.  That’s when I decided to add shredded carrots.  Coleslaw is awesome and the perfect match for fish.  I think this slaw would also be a good accompaniment for barbecued pork, fried chicken and ribs…I so glad I found this recipe and now I don’t have to buy Kentucky Fried chicken’s coleslaw….sorry Colonel.
