I wanted to prepare the traditional split pea soup with a little twist and saw Alton Brown’s recipe which sounded really interesting and of course I wanted to try it…curry powder in split pea? I had to try it
The meringue is slow baked to form a gooey center which is quite different from traditional meringue where the results are not marshmallow-like. The crust has a the hard exterior like the meringue drop, but the inside is soft and sticky, like the marshmallow topping.
The dish is creamy and rich. I would decrease the amount of broth and use a little more heavy cream. I think the sauce should be thicker. This is one dish I may re-visit one day and see what I can do to make it better.
Chicken tandoori can be served with basmati rice or couscous and mango chutney for added nirvana.
