Lidia Bastianich recently prepared this wonderful vegetable dish that reminds me so much of Italy. Lidia prepares simple Italian dishes effortless and encourages you to try it. I had the opportunity to eat in her restaurant in New York and simply enjoyed every single bite. This is so simple and the aroma is unbelievable!!! When I took my first bite, it reminded me of Italy…eating in one of the restaurants in Tuscany…how I wish I can go back to Italy…one of my favorite places to visit.
I thought I would surprise Mom for a late lunch at Fog City Diner. She recently saw rave reviews of Fog City’s Mac n Cheese and wanted to surprise her. We walked from the financial district to Battery Street and I had forgotten how far it is for Mom.
I tasted Habanero & Green Chile Sausage and thought it would be good to make Jambalaya.
Brown tofu and set aside. Using the same pan, add ground pork until brown. Add ginger, garlic, scallions, bell pepper, szechuan sauce, and tofu cook for 30 seconds. Stir gently. Add stock and bring to a full boil. Thicken with cornstarch. Sprinkle with remaining scallions and serve with brown rice or white rice.
