OMG this was absolutely DELICIOUS!!!! I felt like I was sitting in a Bistro outside of Paris enjoying the countryside with a glass of wine, French bread, and watching the people passing by. The smell and taste of herbes de Provence was amazing. I wanted to eat some more of this delicious grain….lots of fiber. Mom wants me to prepare this for Thanksgiving dinner. I will make it prettier by making fresh breadcrumbs instead of placing pieces of bread on top.
Easy to make and really delicious. The layers of spices were perfect and the mix of walnut nuts, cherries, and grapefruit added flavor. This dish keeps well and is excellent cold. Quinoa is high in protein.
I’m going to make this tonight and will cheat a bit since I did not have time to soak black beans. I will just purchase a couple of cans of Organic Black Beans from Trader Joe’s (I like their brand better than the other one’s available in the market) using the juice of the beans, jar of Salsa Verde, onions, bell pepper, garlic, tomatoes, and brown basmati rice. I never measure when I am cooking.
