I’m taking a different approach and that is by keeping the head which is full of delicious flavors that will make the sauce richer if there is such a word. In fact I was even thinking that Anthony Bourdain and Andrew Zimmer will prepare the dish this way. Ina carefully butterflies the prawns keeping the tail intact while I removed the tail and kept the head intact.
I think one of my favorite comfort food when the weather gets cold, raining is having a nice bowl of linguine with clams, crusty bread, and a bottle of wine. I recently visited friends of mine and for dinner John made linguine with clams.
Seafood lovers know that fish skin might be the best part when cooked right. Family/ friends know me by now that I don’t like to waste anything. Basically crispy-fried salmon skin is like salmon rinds as opposed to pork rinds. This method makes the skin come out crackly crisp. Make sure the skin is completely free of scales. Do this by scraping it with the edge of a sharp knife. Rinse any scales away. Pat the skin completely dry with paper towels. The skin must be dried out as much as possible before cooking.

I used Chinese noodles and it was so good with the sauce. Chinese noodles are generally made from either wheat flour, rice flour, or mung bean starch. The sauce coated the noodles and Mom was simply in heaven. As for the Garlic bud, it was really good and wished I knew more about this garlic. It did not have a strong garlic taste; it was kind of sweet like an onion.

This was absolutely delicious especially with Sauvignon Blanc. I can smell and taste passion fruit when I drink this wine. It was so delicious with shrimp curry that I kept drinking and taking small bites…I was savoring every single bite. Oh the fried rice was to die for. Too bad I did not make enough for leftovers.

This was is easy to prepare and the only thing that takes time is peeling the shrimp and deveining it. I know you can purchase pre-cooked shrimp but I think it loses the flavor.
I just purchased 3 1/2 pounds of fresh manila clams for steamed clams with Vermouth, shallots, garlic, butter, Italian parsley, warm crusty sweet French baguette and chilled Pinot Grigio.
